Oh my goodness, have you all heard about giersch? It’s an unkraut (weed) that apparently tastes delicious! Who would have thought?!
Couscoussalat mit Giersch
First up, we have a couscoussalat with giersch. This dish not only tastes amazing, but it’s also so easy to make. Here’s what you’ll need:
Ingredients:
- 200g couscous
- 250ml chicken broth
- 30g almonds
- 1 bunch of giersch
- 1/2 lemon
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Put the couscous in a bowl and pour chicken broth over it. Cover the bowl and let it soak for about 10 minutes.
- Meanwhile, toast the almonds in a pan and let them cool.
- Wash the giersch thoroughly and roughly chop it. Mix it with the lemon juice, olive oil, salt and pepper.
- Fluff up the couscous with a fork and mix in the giersch mixture and almonds. Enjoy!

Giersch-Pesto
Next up, we have a giersch-pesto! I mean, who doesn’t love a good pesto?
Ingredients:
- 2 large handfuls of giersch
- 2 cloves of garlic
- 50g grated parmesan cheese
- 50g pine nuts
- 150ml olive oil
- Salt and pepper to taste
Instructions:
- Wash the giersch and dry it thoroughly.
- Roast the pine nuts in a pan until they’re golden brown.
- Add all the ingredients together in a blender and blend until smooth. Add more salt and pepper if needed.
- Enjoy your delicious giersch-pesto with pasta, bread, or anything else your heart desires!
Buntes Rührei mit Giersch
You can even add giersch to your breakfast! How would you like some colorful scrambled eggs with giersch?
Ingredients:
- 3 eggs
- A handful of giersch
- Salt and pepper to taste
- Butter or oil for frying
- Cherry tomatoes, bell peppers, and/or onions - chopped
Instructions:
- Whisk the eggs together in a bowl and add salt and pepper.
- Wash and chop the giersch and add it to the bowl with the eggs.
- Melt the butter or oil in a pan over medium heat and add the chopped vegetables. Cook until they’re softened.
- Add the egg mixture to the pan and cook until the eggs are done.
- Enjoy your colorful and nutritious breakfast!
